As I spend time with various friends and family this summer, the usual questions arise about my gluten free eating habits. The simple answer to why I avoid gluten is the symptoms I experience, which include mental fatigue and dry eyes. The symptoms can span a wide range and usually target the weakest link in your body - which is not always the stomach as commonly assumed (celiac disease). One way to find out if you have a gluten sensitivity, aside from testing is to eliminate gluten completely for several weeks and then add it back and take note of any differences.

Getting the test is recommended because gluten can cause birth defects, miscarriages and even liver disease - which is not something you will "feel".
